Ingredients
For the Bread
- 2/3 cup granulated sugar
- 1/2 cup butter, softened
- 1/3 cup plain Greek yogurt
- 1/3 cup milk
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
For the Cinnamon Sugar Layers:
- 1/2 cup packed brown sugar
- 2 teaspoons ground cinnamon
For the Cinnamon Apples Layers:
- 2 large apples (Granny Smith or Honey Crisp are good options), peeled and cut into small cubes
- 3 tablespoons packed brown sugar
- 1 teaspoon ground cinnamon
For the Glaze:
- 1/2 cup powdered sugar
- 1 tablespoon milk
- 1/4 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F.
- Beat the sugar and butter together in a large bowl or stand mixer until soft and creamy.
- Add the yogurt and milk, then beat well.
- Add the eggs and vanilla and combine.
- In a small bowl combine the flour, baking powder and salt. Gradually stir into the wet ingredients.
- To make the cinnamon sugar: In a separate small bowl, combine the cinnamon and sugar together.
- To make the cinnamon apples: In a medium bowl, toss the cubed apples with the brown sugar and cinnamon until covered.
- To layer the bread: In a greased or parchment-lined bread pan, add half of the bread dough. Top with half of the cinnamon sugar, then spread half of the apple mixture over the sugar.
- Spoon the remaining half of the dough over the apples, making sure to cover well.
- Top with the remaining apples and cinnamon sugar.
- Bake for 50-60 minutes, or until a toothpick inserted in the middle comes out clean.
- To make the glaze: In a small bowl, stir the powered sugar, milk and vanilla together until combined.
- Spoon the glaze over the warm bread when it's out of the oven. Enjoy!
Notes
- Be sure to not over stir your bread or it can get rubbery and dry.
- You can substitute sour cream for the yogurt.
- If your bread begins to darken too quickly, cover with tinfoil.
- You can ice the bread while warm and the icing will soak in some. Or wait until the bread has cooled completely and the icing will stay pretty and white on top of the bread.
- Store in an airtight container in the refrigerator for up to 5 days.
