Making the dough is really easy (it’s a little similar to my Easter bread recipe since it’s uses warmed milk).
After the first rise, you’ll then roll out the dough, top with brown sugar and the homemade apple pie filling, and slice into about 12 rolls. The ends might be tinier, that’s okay!
You’ll arrange them Sister Schubert style in a round baking dish.
And then they’ll rise some more. Look how fluffy!
Then whip together a quick drizzled icing for the topping.
Of course adding more icing when necessary.

Apple Pie Cinnamon Rolls
Apple pie cinnamon rolls are the perfect cold-weather breakfast! Fresh cinnamon roll dough filled with a delicious homemade apple pie filling, certain to warm you up in the morning and fill your belly with happiness.
Ingredients
For the cinnamon rolls
- 2 ¾ cups all purpose flour
- ¼ cup granulated sugar
- 1/4 teaspoon salt
- 3/4 cup whole milk
- 3 tablespoons unsalted butter
- 2 1/4 teaspoons (1 package) instant yeast
- 1 large egg
- ⅓ cup light brown sugar
- 2 cups homemade apple pie filling
For the icing
- 2 cups powdered sugar, sifted
- 1/4 cup whole milk
- 1 tablespoon unsalted butter, melted
- 1 teaspoon vanilla extract
Instructions
- Add the flour, sugar and salt to a large mixing bowl and stir with a whisk until totally mixed.
- In a stove pot, add ¾ cup of the milk and 3 tablespoons of the butter and melt until the temperatures reaches about 110°F.
- Turn off heat, mix in the yeast, cover and sit for 5 minutes to watch the yeast bloom a little.
- Add yeast mixture to the bowl of a stand mixer. Slowly add in the bowl of dry ingredients and the egg. Using the hook attachment, mix the ingredients together for about 5 minutes on low speed. The dough will be a little sticky still.
- Cover and let rise in a warm area for about 30-60 minutes until the dough has doubled in size.
- Empty the dough out onto a floured piece of wax paper and roll out to about ⅛” thick.
- Sprinkle the brown sugar to evenly coat the dough.
- Spread the apple pie filling evenly over the top of the sugar.
- Roll up the dough along the long edge. Not too tight.
- Cut the rolled up log into 12 even pieces.
- Lightly grease a 9” pie dish then arrange the pieces into the pie dish.
- Cover again and allow to rise in a warm place for about another 60-90 minutes.
- Heat the oven to 375°F.
- Bake in the heated oven for 24-26 minutes or until lightly browned, then remove and allow to cool.
- In another smaller mixing bowl, make the icing by adding the sifted powdered sugar, 1/4 cup milk, 1 tablespoon of melted butter, and 1 teaspoon of vanilla extract. Beat together with a whisk.
- Once the cinnamon rolls have cooled to just warm, spoon the vanilla icing over the top of them. Add just enough to be able to see the apple pie filling, but serve extra icing for those that want more icing.
