Enter the avocado tomato English muffin.
Quick, simple, and oh so tasty.
I added slices of fresh mozzarella, and added a pinch of salt to the tomatoes – this really brings out the flavor!
Since you’re only using half of a precious avocado, use the other half for this smoothie or use it for half a batch of my no mayo egg salad!

Ingredients
- 1 English muffin
- 1/2 avocado, sliced
- tomato slices
- 2 slices cheese, (I used fresh mozzarella)
Instructions
- Cut English muffin in half with a knife.
- Pile on cheese, tomato, and avocado slices. Add salt if desired to enhance flavor.
