As a millennial, of course I love my avocado toast. But it does get a little boring sometimes.

And this grated egg toast was VIRAL.
Who has known about this grated egg trick before? I don’t know who originally went viral with this recipe, but I thought it was clever!
I love hard-boiled eggs but never thought about taking a grater to one. What a way to mix it up!
Use this trick for salads, casseroles, maybe pasta? And definitely on this avocado toast.
Chili flakes, sea salt and fresh pepper are all you need to jazz it up even more.
The original recipe I saw had a whole tablespoon of olive oil and a teaspoon of chili flakes, but I cut that in half for the recipe.

Shredded Egg Avocado Toast

Ingredients
- 1 slice of bread
- 1/2 tablespoon extra virgin olive oil
- 1 hard-boiled egg (cooled)
- 1/2 teaspoon chili pepper flakes
- ½ teaspoon sea salt
- ½ teaspoon black pepper
Instructions
- Start by toasting your bread until golden brown, then drizzle oil the olive on it.
- Slice an avocado and place it evenly on the toasted bread.
- Peel and grate a hard-boiled egg over top the avocado.
- Sprinkle chili flakes over the egg and avocado for a spicy kick, add a dash of salt and pepper to taste.
- Serve and enjoy!
