Heirloom tomato tart with homemade puff pastry, vegan pesto, and heirloom tomatoes. Delicious!
If you’ve been following along, we started this week with homemade puff pastry, a vegan almond pesto, and we’re finishing up the week with the finished product: heirloom tomato tart.

I used mini heirloom tomatoes. They were just too darn cute to resist.
You don’t have to make everything homemade, but I’d love to hear if you do!
Of course if you’re lucky enough to grab the Trader Joe’s frozen puff pastry, that will save you some time.
All the flavors really compliment each other in this dish, and I really liked the way my pesto and tomatoes tasted together.
The pesto is vegan, which defeats the purpose with this puff pastry since it’s basically baked butter. So use whatever pesto you like!
Great as an appetizer (or even a meal) if you want to share a slice or two with friends.

Heirloom tomato tart
Heirloom tomato tart with puff pastry (option for homemade), vegan pesto, and heirloom tomatoes. Delicious!
Ingredients
- 1 sheet puff pastry
- 1/2 cup basil spinach pesto, (or your favorite pesto)
- assortment of mini heirloom tomatoes, halved
- sprinkle of sea salt
Instructions
- Bake your puff pastry according to package instructions (or if making homemade, as listed here). (Usually 425°F for 12-15 minutes.) Let cool. * (See note)
- Spread pesto over puff pastry.
- Add the cut tomatoes on top of the pesto, sprinkle with salt.
- Cut and serve!
Notes
I chose to bake the puff pastry before putting the pesto and tomatoes, but you can bake the pastry with the toppings if you prefer it to be a hot dish.

Thanks Michele! If you like tomatoes you'd love a tomato tart :) You could also try it with cream cheese instead of pesto if that's more up your alley!

I love this tomato tart! I've seen these popping up all over the place this summer, and it always makes me excited to try them. The pesto sounds like the perfect base, too! Delish!

The pesto was great for this recipe! I've seen a bunch with a cream cheese base (which I was tempted to do) but thought I'd go for a vegan alternative. Then I realized that the puff pastry I made was not vegan, oops!
