Ingredients

  • 2 (9-inch) pie crusts
  • flour, for dusting
  • 1/2 cup strawberry jam
  • 1 large egg
  • 1/2 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • sprinkles (optional)

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper and set aside.
  2. On a clean work surface, lightly dusted with flour, unroll the pie crusts. You can use a pastry cutter or pizza cutter to cut equal sized pieces (6-9 rectangles for each pie crust). Transfer half of them to the parchment lined baking sheet.
  3. Place about a tablespoon of jam in the center of each dough square on the baking sheet. Place a piece of pie crust on top and seal the edges with a fork.
  4. Beat an egg in a small bowl, and use it to brush the tops of the pop tarts lightly.
  5. Use a fork to press a few holes in the top of your pop tarts to let air escape during the baking process.
  6. Bake at 400°F for 10-12 minutes or until golden brown.
  7. While the pop tarts are baking, start on the icing.
  8. In a small bowl, combine the powdered sugar, milk, vanilla, and a little bit of jam and whisk until smooth. Spoon icing on warm pop tarts. Top with sprinkles if using.
  9. Cool on a wire rack and enjoy!

Notes

  • Store in an airtight container on the counter for up to 3 days. They freeze well too! Just wrap each pop tart in plastic wrap, and them wrap in aluminum foil and place in a freezer safe bag for up to three months. Let them thaw on the counter before enjoying
