Friday night pizza night!
Really It could be any day that you’re reading this, so you don’t have to wait til Friday.
Pizza night happens to be pretty popular in my house (maybe yours too?) and since we’ve got the easy pizza crust recipe down, sometimes I like to get a little creative with toppings.
We’ve seen grilled pineapple and jalapeno pizza, pimento cheese pizza, even some truffle oil pizza with pear and black olives.
So. many. pizzas.
Actually, the first time I ever remember eating a fig was on a honey and fig pizza.
Maybe it was more of a flatbread? Pretty sure it was from a recipe booklet my grandma had from her church with family favorite recipes.
That’s actually where I fell in love with the idea of honey on a pizza in the first place.
So when I saw figs were out again on my last trip to the grocery store, I remembered that pizza night and decided I had to make it again!
Honestly I don’t remember what the other toppings were in that original recipe, so I turned to my new favorite resource again: the Vegetarian Flavor Bible.
Figs aren’t exactly a normal topping option when you order in, so I needed some guidance.
You guessed it – feta + walnuts were high up on the list of things that go with figs.
If you’re not a fan of the idea of marinara sauce with this topping combo, you can use a little bit of olive oil instead.
I ended up using sauce, just a little less than I do on a normal pizza.
The pictures are from the time I opted for Trader Joe’s frozen pizza crusts over homemade, but it tastes even better with a thick homemade base!
Tell me – do you like figs? Have you ever tried it on pizza?

I made this tonight for dinner and it was ah-mazing! I'd never bought, used or eaten fresh figs before so it was an adventure - so thanks for expanding that horizon. (PS - fresh figs are pretty tasty; I'm going to make jam with the leftovers.) I used Wolfgang Puck's dough recipe with 1/2 APF and 1/2 GF flour to cut down a bit on the gluten. The texture was OK but the crust was a mere backdrop to the toppings. It was savory and a bit sweet, quite rich and filling. I did the broiler trick (I'm not sure I ever used the broiler in this oven before!) and it did make a difference. The walnuts and feta were toasted perfectly on top. I also used the cast iron griddle and it is my new pizza & grilled sandwich pan. Love it!

YAY! I love making pizza in my cast iron :) Great idea to make jam with the leftover figs, especially because you don't need too many for this pizza. The Wolfgang pizza dough with honey is a great sub suggestion too. Thanks so much for letting me know how it went Deanne!
