These lasagna roll-ups are a similar concept, with only 5 main ingredients (including 3 cheeses!) plus spices. Couldn’t be much easier.
Here’s what you’ll need:
- a box of lasagna noodles, you’ll boil these first
- marinara sauce, either a quart-sized jar or 4 cups of homemade
- ricotta cheese, full fat is best
- mozzarella cheese, either pre-shredded or freshly grated
- parmesan cheese
- spices: dried parsley (plus fresh parsley for serving if you’d like), garlic powder, onion powder, salt
You mix the cheeses together with spices, put them on the lasagna noodles, and roll ’em up.
It’s important to cover the rollups fully in sauce before baking, so they don’t get dry and burn!
Top with extra cheese of course and you have yourself an easy vegetarian dinner. Lasagna rollups for the win!

Ingredients
- 12 Lasagna noodles
- 4 cups marinara sauce, divided
- 15 ounces ricotta cheese
- 2 cups shredded mozzarella cheese, divided
- ¼ cup shredded parmesan cheese
- 2 tablespoons dried parsley
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- Grated parmesan and fresh parsley, to serve (optional)
Instructions
- Preheat your oven to 375℉
- In a large pot, boil the lasagna noodles until al dente, or soft enough to bend or roll up without breaking, but not so soft they start to rip.
- Pour 1 ½ cups of the marinara sauce on the bottom of your baking dish and spread to cover the bottom.
- In a large bowl, stir together the ricotta cheese, 1 cup of the shredded mozzarella cheese, the shredded parmesan cheese, and all of the dried herbs and spices.
- On a large baking sheet (or clean flat surface), place the lasagna noodles out straight in a single layer. You will need to use two baking sheets, or do this in batches.
- Spread about 3-4 tablespoons of the cheese mixture on each of the lasagna noodles.
- Gently roll up each noodle and place it in a casserole baking dish.
- Pour the rest of the marinara over the rolls evenly, then sprinkle the rest of the mozzarella on top.
- Bake for about 40 minutes, or until all of the cheese has melted.
- Sprinkle grated parmesan and fresh parsley over top (if using), and serve!
