Those who know me, probably already know that I am absolutely In.Love. with pumpkin spice latte’s from Starbucks.
(PSL’s, as true addicts know them.)
Even the idea of a hot, venti, fall-flavored drink on a chilly morning makes me want to go to bed RIGHT NOW just so it will be tomorrow morning already.
Yes, I said venti. I started to feel ripped off if I ordered a tall/small size a couple years ago when my addiction became a real problem.
With that said, I’m surprised I haven’t made them at home before now.
It’s quite easy, and you can make as much (or as little) as you want.
When I heard of people making it in the crock pot, I thought that was genius. Until, that is, I got impatient waiting two hours as the post I mention below suggested (I only waited one).
I’m sure the exact same recipe could be made on the stove top. Though if you are forward-thinking enough to make in your crock pot, the smell will spread through your house and make you want to make these every day for the rest of your life. Too much? Alright.
Anyway, a large batch of these would be great for a party or even to make for your family before you go out trick-or-treating this week.
Or just a regular Sunday morning.
I only made enough for two cups, but this recipe can be easily double, tripled, quadrupled.
Actually, I was inspired by this post from Thriving Home Blog who used 8 times the ingredients I did. I don’t know the word for that. Octupled?
Either way, you probably should make more than you think you’ll need. They don’t last very long.
Luckily, I had a second cup ready. Will you invite me over when you make some more?

Pumpkin spice latte
Skinny pumpkin spice latte - in the crockpot! Perfect for large parties or a way to treat yourself on a lazy morning.
Ingredients
- 1 cup skim milk
- 1 cup coffee, , freshly brewed
- 1 tablespoon pumpkin puree
- 1 tablespoon vanilla extract
- 1 tablespoon sugar
- 1 teaspoon cinnamon
- 1 pinch pumpkin pie spice, (optional)
Instructions
- Add all ingredients except for pumpkin pie spice into crock pot. Cook on high heat for 1-2 hours.
- Stir liquids in crock pot before serving hot in mugs. Can add a pinch of pumpkin pie spice as topping.
Notes
Serves 2 - Can easily multiply the recipe for a larger party.

I just read the largest pumpkin grown in America weighed over 1,800 pounds! Who would have imagined?

I didn't even know it was National Pumpkin day! I can't believe I missed it. 1,800 pounds! I wonder how many Pumpkin Spice Latte's I could make with that.
