Have you ever tried parsnips?
I recently discovered them about a year ago. Maybe there is a better word besides “discovered” since these have obviously been around for a while, but somehow I didn’t really know about them.
They look like white carrots, and are surprisingly versatile in that you can use them in so many dishes. In soups, roasted vegetables, and even mashed like potatoes!
Today I am going to share one of my favorite ways to eat them: in fry form.
“Fries” is a deceiving name because they are actually baked, but we’ll go with it.
I made these for some friends and thought I could trick them into thinking they were regular french fries.
(I like to make swaps and see if people notice.) But I failed to hide the parsnip remains before they saw them. Oh well. Whether or not you can fool your friends, they sure taste good!
All you need to do is cut a parsnip in small slivers, and try to make them all the same size (about half an inch thick). This is pretty much impossible for me (notice some of the smaller pieces got a little more crispy) but it will work out.
Coat them in olive oil (an olive oil spray is a great trick for this), sprinkle some fresh rosemary, and bake at 450 degrees for about 20 minutes. Quick, easy, and delicious!

Ingredients
- 4 Parsnips, (or 1 parsnip for each serving you wish to make)
- 2 tablespoons Olive oil, (about 1/2 tablespoon per parsnip)
- Fresh rosemary, (use your judgement, but about 1 sprig per parsnip)
- salt and pepper to taste
Instructions
- Cut parsnips into strips about 1/2 inch thick.
- Coat with olive oil and sprinkle with fresh rosemary and toss together until covered. Add salt and pepper as desired.
- Bake at 450 degrees Fahrenheit for 20 minutes or until crispy.
