Meet my new favorite salad.
I just said that about my new favorite dressing, but I just can’t get enough of these two together.
I’ve never been a huge fan of salad. Unlike my mom, who will eat lettuce plain just for the fun of it (seriously).
Spinach salads I have learned to love more over the years, but I’ve never had a combo quite as good as what I’m about to share with you.
I had a similar salad recently at the restaurant Mellow Mushroom, and it was good enough for me to try to recreate it with slight changes.
In my version I use dried cranberries instead of dried cherries, and honey almonds instead of their homemade candied pecans.
You can use regular almonds instead of honey, but I noticed that the brand I bought actually had less calories in the honey almonds vs the regular. Weird, but true.
Also the flavor worked well since I used the honey poppyseed dressing I’ve already mentioned.
Some day I’ll make my own honey almonds instead of having to buy them! (update: I’ve made honey roasted pecans now!)
I literally ate this salad for 8 days straight.
Once I find something I like it’s (apparently) hard to step away from.
The proportions in the recipe below are what I used for serving at dinner (enough for 4).
But when I make this just for myself I kind of just add all the ingredients together without measuring.

Ingredients
- 6 cups fresh baby spinach leaves
- 1/2 cup dried cranberries
- 1/2 cup feta cheese
- 1/2 cup chopped apple
- 1/3 cup honey almonds, (or regular almonds)
- Honey Poppyseed Dressing
Instructions
- Combine all ingredients in a large bowl and toss together.
- Serve immediately with honey poppyseed dressing.
