You might be thinking, what is a sunflower wrap?

Well, I *think* I just made that up. “Collard greens wrap” just didn’t have the same ring to it.

Since this was inspired by the vegan meal I had at Luna’s Living Kitchen (they call it a “West Coast Wrap”) that is made with a sunflower hummus, I thought why not just embrace the uniqueness of the hummus and call it a sunflower wrap!

Now I just wish I had an actual sunflower sitting on the table in the pictures.

My gif-making skills might need some work but this one basically shows you what’s in it.

Collard green, red cabbage (not pictured), sunflower hummus, sprouts, cucumber, tomato and avocado. So much healthy.

Before you ask – sure, you can make this with a different kind of hummus if you don’t want to make the sunflower hummus.

But then you won’t be able to call it a sunflower wrap, and where’s the fun in that?

This is a naturally vegan and gluten free meal, but is packed with so much flavor that you won’t even realize it.

This is coming from the queen of bread (me), so if I love a sandwich made out of a collard green, you will too.

Serve with hot sauce. Or more hummus.

  1. Layer ingredients in the following order: Collard green, red cabbage, hummus, sprout, tomato, cucumber, avocado.
  2. Wrap tightly.
  3. Serve immediately with hot sauce or more hummus.

Can these be stored in the fridge for a few days? I'm meal prepping and wondering if the greens will get soggy.

What I would suggest if you're making ahead of time is to wrap just the veggies (minus the tomatoes and hummus) and pack the hummus and tomato slices separately to add right before you eat. Otherwise I think you are right that the greens would get soggy.
